I’m all about being outside during summer. In fact, I’m so all about it that I usually force my boyfriend to leave the confines of his man-cave for more exciting adventures like beach volleyball, biking through Central Park, and just generally living up the shit out of what’s left of the warm weather. He’s a good sport about it, gotta say. I was reading my latest issue of Om Yoga Magazine last Friday afternoon, basking in the sunshine on my parent’s front porch when I came across the coolest article on picnics.
Yes, picnics. Leave it to me to lose my shit over something you probably stopped doing once you were no longer a toddler. The article gave some fantastic recipes that are totally picnic-friendly, meaning that they required little to no silverware and paired well with copious amounts of vino. Alright, maybe I threw that little suggestion in there but what’s life without a little wine?
Anyway, I was SO inspired that I decided to make my own picnic and force my mom to eat it with me. We had a blast whipping up some of the simple recipes that I had come up with (like my boyfriend’s favorite Greek-style pasta salad) and even recreating one of the ones from Om Magazine. Trust me when I say that you’re gonna eat your heart out at some of these pictures. I’ve included some step-by-steps below in case you feel inspired to move your dinner outside to commune with nature like we were, trust me when I say it’ll bring you right back to summer days as a kid. The only difference between then and now is that I no longer have the attention span of a gnat and am able to finish my dinner without spilling it all over myself, go me!
Post-picnic, mom and I decided to continue enjoying what was left of the afternoon sun and kicked back with our favorite reads. Om Magazine is the perfect summertime read, chock full of interesting articles about health and fitness…. and no, it’s not only about yoga! This past month had great natural beauty tips and awesome interviews with people like Britta Trubridge, the yogi you’ve probably seen around your Instagram known for doing the COOLEST underwater poses.
The best part is that the UK-based magazine has cheapo online subscriptions that download right to your device of choice…I’m personally a Kindle Fire girl (shout out to the boyf again, thanks babe). I definitely say it’s a worthwhile read for anyone who’s interested in their health or fitness without being like…well… “Women’s Fitness” about it. You know?

Greek-Style Pasta Salad:
1. Cook pasta according to package; drain and set aside
2. Open jar of artichoke hearts marinated in oil; drain and reserve liquid.
3. Rough chop 1 jar roasted red peppers drained, artichoke hearts, and spinach
4. Toss peppers/ artichoke hearts/ spinach/ feta with pasta. Combine well.
5. Drizzle on reserved artichoke juice and bottled Greek dressing to taste.
6. Serve warm or cold with fresh ground pepper on top.
1. Pulse 1 jar roasted red peppers (drained) in food processer
2. Add 2/3 C. sunflower seeds; Pulse until combined
3. Add 1 Tsp. cumin, 1/2 lemon (juiced), 1 sprig rosemary (no stem), pinch of salt
4. Pulse until combined.
(I also added 2 cloves of garlic because garlic makes everything better!)
