So I was being super basic this past weekend and a few friends of mine decided it was high time we went apple picking. We had a blast, of course we didn’t just frolick around in the apple orchard but we hit up the corn maze, fed some random farm animals, and stuffed our faces with cider donuts. Don’t these donuts look amaze? We ate like, way too many. All of the noms. Ah, how I love Fall in good old dirty Jersey. Oh and can we take a minute to discuss how adorable my outfit was? I really look homeless most of the time, ask any of my friends, but I occasionally make an effort to look nice and I always surprise myself when I pull off a particularly good look. Evidence below.
Now of course, the only PROBLEM with apple picking is that you literally always go way overboard and when it comes time to pay you end up dropping fat stacks on fruit. No? Just me? K. Well $11 later I walked away with eighty pounds of apples that I had no idea what to do with.
I obviously decided to bake something. Now that I’m back on my Weight Watchers lifestyle plan (more about that here), I’ve started skipping out on baked goods that I don’t make myself because it’s impossible to guess point value on something someone else made. It just doesn’t work. So I concocted this AMAZEBALLS loaf recipe that I just had to share with you all. The directions are really straightforward and you don’t need any weird ingredients…if you end up giving this bad boy a shot, share the love on social media with the hashtag #BakewithVS and tag me in it for a RT or repost! 3 Cups All Purpose Flour
1.5 Cups Sugar
1 Teaspoon Baking Powder
1 Teaspoon Salt
1 Teaspoon Baking Soda
1.5 Cups Applesauce
1.3 Cups Canola Oil
1 Teaspoon Vanilla Extract
3 Cups Chopped Apples
1. Preheat your oven to 350 degrees and grease up two loaf pans.
7. I’d recommend chopping them even finer than I did just to make life a little easier.
Check them after a half hour but they’ll take more like 45-50 minutes to be done completely.
Let them cool and enjoy!
