I’m really not much of a baker. When it comes to the kitchen, I definitely like doing something a little more forgiving (in terms of mistakes) like actual cooking. Baking generally requires a lot of attention to detail, which I don’t have, and patience for following a recipe… which I definitely don’t have. So that means that if I’m reaching for anything that involves flour and sugar, the recipe has to be forgiving to screw ups because that’s basically inevitable whenever I’m baking.
This banana bread recipe is not only delicious, but super easy to follow and really easy to tweak to fit whatever your health restrictions are. Personally, I follow Weight Watchers so that means I try and limit the amount of fat and processed foods in favor of more wholesome ingredients. I’ve swapped out almost all of the fat, but the resulting bread is super moist thanks to the addition of apple sauce! Throw in a few spices and you’re left with a delicious and healthy dessert option that won’t have you on the treadmill sweating with regret the next day.
What You’ll Need:
1 & 1/2 C. Flour
1/2 C. Sugar Substitute (I use Truvia for Baking!)
1 & 1/4 tsp Baking Powder
1/2 tsp Baking Soda
2 Egg Whites
2 Mashed Bananas
1 C. Apple Sauce
1 tsp Cinnamon
1 tsp Nutmeg
1 tsp Pumpkin Pie Spice
1. Preheat your oven to 350 degrees and grease one loaf pan with cooking spray.
2. In a large bowl, mix the flour/sugar/baking powder/ baking soda/ all spices to combine.
3. Slowly mix in egg whites/ bananas/ and apple sauce. Mix to combine.
4. Pour into greased loaf pan and bake for 50 minutes or until a knife comes out clean when inserted into the middle of the loaf.
That’s it! Super simple right? The best part is you can add anything you want to spice up the original recipe. I love adding chocolate chips, personally, because I’m a serious chocoholic but you could easily throw in some nuts or maybe even some cranberries or white chocolate chips for a totally different flavor!
