I like chocolate.
Like, I REALLY like chocolate.
To the point where my night isn’t complete unless I have something chocolatey right before I go to bed (super healthy, I know). Usually my drug of choice are a few Reduced Fat Oreos…and by a few I mean like, a sleeve or two and GOD HELP YOU if you’re my boyfriend and you happened to eat the last of the Oreos without putting them on the shopping list for the week.
This particular situation happened not too long ago and I was left in dire need of a chocolate treat. For those of you concerned, my boyfriend lives to this day (but only because he can run a little faster than me) and in fact, I might even be a little thankful that he ate all of the Oreos because without him doing that deed I never would have discovered the wonders of the Chocolate Mug Cake.
After a little time with the Google machine, I quickly discovered that I had all of the makings of a little mug cake that cooks right in the microwave. That’s right, in 70 seconds flat* you can have your very own serving of a chocolatey cake that you don’t need to share with any Oreo-stealers if you don’t want to. The directions are simple and it’s even got wiggle room for a little customizing based on your tastes! Enjoy!
What You’ll Need:
1/4 C. AP Flour
2 T. Cocoa Powder
2 T. Sugar (or Stevia)
2 T. Vegetable Oil
1/4 t. Baking Powder
1/4 C. Milk
1. In a mug, combine your dry ingredients (that would be the flour, cocoa powder, sugar, baking powder). Try and get out any lumps and bumps.
2. Stir in the milk and oil, again NO LUMPS. Drop in as many chocolate chips as you’d like.
3. Pop that bad boy in the microwave on top of a paper plate or a paper towel in case it overflows, and start your microwave on 70 seconds*.
PLEASE NOTE: All microwaves are different, if you’re unsure about the timing of the cake and don’t want to burn it maybe consider starting with 60 seconds and checking first. If it’s still liquid in the middle, then pop it back in for another 10 seconds.
You could absolutely skip the chocolate chips and put in maybe like, a spoonful of Nutella or peanut butter. I’m sure that would taste AMAZING!
